Only five current digital SLR cameras Canon EOS has now done. The DSLR two levels of entry into the XSi and XS, the midrange or sometimes as a sub-$ 1000 range on the 50D, the economy full-frame 5D Mark II and 1Ds Mark II, the professional, Mark III. All older Canon cameras are too old to be considered.
Having lived in Africa and has been a wildlife photographer, I would draw your attention to two things.
1) The time of day that most of the animals during the opening times of dawn and dusk shot when they feed. This means that you have a very low sensor noise at high ISO.
2) It is the brand of camera that the photos that can help the photographer as a good instrument to make is.
That said, I suggest you have your photographer actually test the Canon 1Ds Mark III rev. 4 mm, with a 400 mm f / 2.8 and a Nikon D3 with a 400mm f/2.8 see and what gives you the best picture quality.

Well Arent really much more than all the facts, so ill answer to your question a little differently. For animals who want something faster AF and a decent number of frames per second. Budget, I would say the 40D or 50D. A little more for a used 1D Mark II (N) somewhere like keh.com. More expensive 1D Mark III. What really is a telephoto lens, like the 400 f/5.6, 100-400 f/4.5-5.6, 500 f / 4 or 600 f / 4 less expensive for most. I would not be less than 400 mm for the wildlife.
